Flourless Orange and Almond Cake with Orange Syrup

This cake does take a bit of "time" but it's effortless if that makes sense & my dinner guests went nuts for it. I make mine in my Kitchen Aid Cooker Processor but can be done in a Thermomix or on your store top with a food processor. Lazy Lady Cake!

Ingredients

2 x Organic Oranges - washed

250 grams Caster Sugar

6 x large cage free happy eggs

250 grams Almond Meal (Or whole almonds and blitz them in your CP or Thermo)

1 Teaspoon Baking Powder

For Syrup - 220 grams regular sugar

For Syrup - 1/2 cup of water

For Syrup - juice of 2 x Organic Oranges

Method

Boil the 2 oranges in enough water to cover them well - do no peel them - boil them whole for 45 mins to an hours until they are soft enough to pierce with a fork with no resistance. I did this in my CP for 45 mins on 100 degrees boiling setting.

Drain and chop the oranges into quarters and blitz in the food processor until large bits can no longer be seen. Make sure you don't throw away any precious juice that came out in the cutting! I did this step in the CP, by draining out the liquid, placing the blades in ( i was lazy, didn't bother quartering) and pulsing for 5 to 7 seconds.

Preheat the over to 160 degrees.

Beat eggs and caster sugar until light and fluffy, stir in the orange puree then fold in the almond meal and baking powder. Again, lazy, batter attachment for the sugar and eggs until done, threw in the rest for a quick stir and it was done.

Pour batter into a pre-lined 18cm pan, or I used a paper baking pan and bake for 1 hour or until done.

Boil up the sugar and water until the sugar has dissolved, add in the the fresh orange juice and reduce to a simmer for a few minutes. I threw everything into the CP for 5 mins on boil at 100 degrees.

Once cooked, spoon over 1/2 of the orange syrup while still hot and reserve the rest for serving. I highly recommend a good scoop of homemade vanilla ice-cream on top while it's still warm, more of the heated syrup and attack... and if you are like me, a dash of orange liquor to take it to the next level... enjoy!
